Last Sunday my Sweetie and I made breakfast together; it had been a long time since we had been in the kitchen preparing a meal together, we usually go out for breakfast on the weekend, but this day we found we had some time before we had to get ready for church. As we were sitting at the bar sipping our coffee and considering what we were going to do for breakfast, my Sweetie piped up and said “Let’s make waffles". It has been ages since we made this dish so while my brain was still processing the suggestion I jumped out of my seat and started looking for the recipe. A good friend had given us this recipe while we were stationed in Guam and I must say it's the best recipe we have every used for waffles. I'm eternally grateful to this fellow cook for his generosity in sharing his recipe with us.
This is a basic waffle recipe. There are no secret ingredients but folding the egg whites in does make the waffles light. Another suggestion is to dress up the basic with the exotic. Add some strawberries or blue berries; add pecans and chocolate chips or pecans and bananas; add strawberries and bananas. Whatever combination you use, add a generous dollop of whipped cream to give it that "bed and breakfast" dress up. Oh, and if you add syrup, warm it up, it does make a difference. Ok...here's the recipe; give it a try and let me know how ya like it.
• 1 cup all-purpose flour
• 1 cup of whole wheat flour
• 4 teaspoons baking powder
• 1/4 teaspoon salt
• 1 1/2 cups milk
• 6 tablespoons vegetable oil
• 2 eggs, separated
Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder and salt. Stir in milk, oil and egg yolks, mixture should be smooth. In a separate bowl, beat egg whites until soft peaks form. Gently fold egg whites into batter.
Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden; serve hot.
Top with strawberries. Or you can top with bananas and pecans. Of course a generous dollop of whipped cream is good too. Pin It Now!

I am making some progress in the redo of our kitchen. I went on a business trip April 1st and came back home this past Tuesday. I'm leaving again on the 25th, the day our counters are being installed, for about 5 weeks. When am I ever going to get this finished? I'm hoping it will be done by the time I get home and all that will need to be done to complete the project is decorating the space.
